fava bean falafel
We absolutely love falafel, love them in salads or as a sandwich. If you’ve made falafel from a box or never made it all, then this recipe is for you!! It’s so easy you’ll be wondering why you haven’t been making homemade falafel till now!
Fava Bean Falafel
What You Will Need
2 cups dried fava beans soaked overnight, then drained
1/2 medium spanish or yellow Onion diced
3 large garlic cloves diced
2 teaspoons cumin
2 tablespoons parsley minced
juice of 1 lemon
salt to taste
1 teaspoon arrowroot or cornstarch
vegetable oil enough to fill your frying pan 1/4 inch high
***equipment***
food processor
2 mixing bowls
rubber spatula
frying pan
1.5 hours prep time // 8 min cook time
Method
combine all ingredients in a mixing bowl, except the arrowroot
have your food processor, rubber spatula, and empty mixing bowl ready
now, run the ingredients through the food processor until its chopped small, not pureed (should look like large grains of sand) You may have to do this in a few batches depending on the size of your food processor. When you have one batch done, transfer the mix to your empty bowl. Repeat this step until all the ingredients have been processed.
** pro tip - as you are mixing, the ingredients tend to stick to the sides in the food processor, so scrape down the sides with a rubber spatula to make sure you have an even blend
after all the ingredients have been chopped in the food processor, add the arrowroot and mix well with a rubber spatula
run the ingredients again through the food processor, using the same technique as above, this time stop when it looks like small to fine grains of sand
cover and refrigerate mix for 1 hour
once the mix is chilled, heat your oil over med heat
scoop about 1 + 1/2 tablespoons of the mix and form into a ball or patty shape
carefully place the falafel balls in the hot oil
cook until golden brown, gently turning to make sure you cook all sides
serve with pita bread and toppings or add them to your favorite salad
